When buying beef, there are different grades to choose from. I was always told that you buy the one with the least amount of white on it because that was fat. But sometimes, the fat helps to tenderize the meat. You don’t want too much fat because it would be too hard on your arteries. Here are some hints to use when choosing your beef.
Prime: It contains the most marbling. This is a more expensive cut, but it is worth it.
Choice: This is what you will usually find in the grocery stores. It has marbling, but just enough for taste and to make it tender when cooking. It will usually cost less than prime.
Select: This has the least amount of marbling. This is the leaner meat. The only problem is that it’s not too juicy or as flavorful as prime or choice.
Not sure how much beef to buy? Divide the cost per pound of meat by the number of servings you want out of the meat. Remember the more bone and fat that is on the meat, the less meat you will get.
The more marbling that you see, the more likely it is to be tender and juicy.

Beef Stir Fry Pot Pie
Here is what you need:
1 pound of ground round
2 Tablespoons of Canola oil
1 teaspoon of seasoned salt
1 package of frozen broccoli mixed stir fry vegetables
1 jar of beef gravy
2 cups of seasoned toasted croutons
1/2 cup of shredded cheddar cheese
3 tablespoons of melted butter
What to do:
In wok or skillet, add oil to coat. Brown ground round and seasoned salt over medium high heat. Add vegetables and gravy; cook for 7-9 minutes. Stir constantly until vegetables are heated thoroughly. Pour into a casserole dish and top with croutons and cheese. Pour melted butter over croutons. Microwave until cheese is melted.
