Beef Vegetable Soup with Noodles
1 pound of ground beef
8 cups water
14-ounce can of tomato sauce, prepared
2 onions, chopped
16-ounce package of loose-pack frozen mixed vegetables
1 tablespoon dried oregano
1 tablespoon of chili powder
2 teaspoons salt
1/2 teaspoon ground black pepper
1/4 teaspoon cayenne pepper
1 1/2 tablespoons olive oil
1 1/2 cups uncooked noodles
Freshly grated parmesan cheese
In a large kettle over medium-high heat, brown ground beef and then drain. Add water and remaining ingredients except noodles and parmesan cheese. Bring to a boil, reduce heat, and simmer while partially covered for 30 minutes. Stir noodles into the soup mixture and heat on low for another 12 to 14 minute or until noodles are tender. Serve with grated parmesan cheese.
