Best Ever Meat Loaf

Meat loaf is one of those dishes that people either love or hate. I find that if one is not too fond of the main dish that it is because they at some point tasted a poor rendition of what meat loaf is supposed to taste like. I remember the meat loaf of my past being a bit more mushy than I like but remember loving the sweet ketchup topping. The recipe below is beautiful put together, easy to prepare and guaranteed to be a crowd pleaser.

For This Recipe You Will Need:

1/3 cup chopped onion

1/3 cup chopped sweet red pepper

1/3 cup chopped green pepper

3 tablespoons minced fresh parsley

3 garlic cloves, minced

1-1/4 teaspoons chili powder

1-1/4 teaspoons dried sage

1-1/4 teaspoons salt

1 teaspoon pepper

2 pounds ground beef

3/4 cup milk

2 eggs, beaten

1/4 cup Worcestershire sauce

2/3 cup dry bread crumbs

4 bacon strips

SAUCE:

1/4 cup chopped canned tomatoes

1/4 cup ketchup

2 tablespoons brown sugar

1 teaspoon salt

1 teaspoon ground mustard

1/2 teaspoon pepper

Directions How To Prepare This Yummy Meal:

Place the first nine ingredients in a large bowl, including the beef which has been crumbled and mix well. Combine the following: eggs, milk and Worcestershire sauce. Mix ingredients into the beef mixture and add crumbs.

Next, prepare a large sheet of foil by greasing it lightly. Place bacon on foil. Using your hands mold the meat mixture into the shape of a loaf and place over bacon. Make sure the foil is tightly sealed around the meat mixture. Refrigerate for 2 hours or overnight to allow the flavors to marry.

Place the wrapped loaf on a baking sheet and bake at 350° for 1 hour. Open the foil and drain the juices from the meat. Spoon the sauce ingredients over the loaf. Bake, uncovered, 30 minutes longer or until no pink remains and a meat thermometer reads 160°.

Note: You may choose to bake this in a loaf pan instead of on top of a baking sheet. If you do this be aware that the cooking time may need to be extended a bit.
