Bistro Salad

Bistro Salad
Just like the salad you get at those popular bistro restaurants, but doesn’t cost you $7.50!

INGREDIENTS:
6 heads endive
2 medium golden delicious apples
3/4 cup walnuts
6 oz goat cheese — (chevre)
1 tsp olive oil
1 tbs sugar
1 tbs kosher salt
1 tsp dry basil
1 tsp dry oregano
1 tsp dry thyme
1 tsp chile powder
1 cup extra virgin olive oil
1/3 cup champagne vinegar
1 tbs chopped fresh chives
1 tsp Dijon mustard
1 pinch salt and pepper to taste

DIRECTIONS:
1. Combine dry spices, salt, sugar, and chile powder.
2. Toss walnuts in olive oil and then into spice mixture.
3. Roast in oven at 325 until golden.
4. Chop endive crosswise into 1/2 inch pieces.
5. Dice apples and combine with endive, walnuts (when cooled) and crumbled goat cheese.
6. In a blender combine champagne vinegar, the extra virgin olive oil, dijon, salt and pepper. Blend on high until well mixed.
7. Toss dressing with salad and serve.
