Blue Cheese Crusted Filet Mignon with Sauce

Some people do not care for it, but personally, I love the taste of blue cheese. I guess it was because, as a child, my mom usually got blue cheese dressing for her salad, so I naturally wanted to taste it. When I did, I really enjoyed the taste. What makes blue cheese blue is it has penicillium (a fungus) injected into it, giving it the blue-green mold look. Now all that may sound bad, but I do truly love the taste of blue cheese, as do many others. When I found this recipe, I vowed to make it to see if I could get my husband to try it.

For this recipe, you will need four filet mignon steaks (1 1/2 inch thick), butter, one white onion, garlic, fresh thyme, beef broth, vegetable oil, blue cheese, and panko bread crumbs. If you cannot find panko breadcrumbs, you can make your own. Remove the crust from day old and flake the white part by hand (don’t use a food processor). Spread the breadcrumbs on a baking sheet and dry at a very low temperature in the oven until the crumbs are dry.

To prep for this recipe, you will need to mince enough onion to make 1/2 cup and three cloves of garlic. Chop enough of the fresh thyme to make 1 tablespoon. Crumble 3/4 cup of blue cheese.

Over medium heat, melt one tablespoon of butter in a skillet. Add 1/2 cup of minced white onion, the three minced garlic cloves, and 1 tablespoon of chopped fresh thyme. Stir and cook until the onion is tender. Add 1 ¼ cup of beef broth and scrap any onions from the bottom of the skillet. Bring to a boil then let it cook until it reduces to 1/2 cup. Set aside.

Preheat the oven to 350 degrees. In a skillet that is safe for the oven (such as cast iron), heat 1 tablespoon of oil over medium heat. Place the steaks in the heated oil carefully and sear both sides until they are brown, then place the entire skillet in the oven. The time you leave them in the oven will be dependent on how you want them cooked – 15 minutes will cook them to medium rare.

Remove from the oven and place the steaks on a baking sheet. Mix 1/4 cup of breadcrumbs with 3/4 cup of blue cheese. Top each steak with this mixture. Turn the oven on broil and place the baking sheet in the oven until the cheese is bubbly – about 3 to 4 minutes. After removing, let it cool for 15 minutes before serving. Serve with onion/garlic sauce.
