Body-for-Life authorized foods aren’t the bland, basic foods that you are allowed on your average diet. The beauty of the Body-for-Life program is that you can eat a variety of regular everyday foods that can be made in your own kitchen and you will never have to skimp on flavor.
This taco salad is a great example of that and takes just a few minutes to prepare. It is a complete and balanced meal that has plenty of flavor and lots of color. This recipe feeds two and you can be sure that your significant other will never know they’re actually eating diet food! Kids will love this recipe too so feel free to make it for the whole family. Isn’t it great to be following a diet that the whole family can be on without even knowing it?
Ingredients:
2 Portions Lean Ground Beef (one portion is equivalent to the size of the palm of your hand)
1 Tablespoon Water
2 Teaspoons Taco Seasoning
2 Whole Grain Pitas
2 Tablespoons Fat Free Cream Cheese, Softened
2 Tablespoons Fat Free Sour Cream
2 Tablespoons Salsa or Picante Sauce
1 Cup Shredded Lettuce
1 Diced Tomato
1/4 Cup Reduced Fat Shredded Cheddar or Mexican Cheese Mix
Directions:
Using a pizza cutter, slice each pita into eight wedges and bake in a 400 degree oven until lightly browned.
Brown ground beef in a skillet. Drain away any excess fat. Add water and one teaspoon taco seasoning and mix thoroughly. Remove from heat.
Combine one teaspoon taco seasoning, cream cheese, sour cream and salsa or picante. Mix thoroughly and divide into two portions. Spread each portion in the center of a dinner plate. Top each with equal portions of beef, lettuce, tomatoes and cheese.
Place eight pita wedges on each plate around the meat and vegetables in a sun pattern and serve.
