Bourbon Yams with Pecan Topping
Try this for Christmas dinner.
INGREDIENTS:
6 lbs Yams
3 large Eggs
1/4 cup Sugar
1/2 cup Butter, Melted
1/2 Cup Whipping Cream
2 tsp Bourbon
1 tsp Vanilla
1 cup Whole Pecans
1/2 cup Butter, melted
1 cup Chopped Pecans
1 cup Brown Sugar
1 cup Flour
DIRECTIONS:
1. Preheat oven to 375 degrees. Butter a shallow 2 qt. casserole dish.
2. Bake yams on an oven rack for 45 minutes or until soft. Half and scoop out pulp.
3. Mash pulp, and add the next 6 ingredients. Stir well to combine.
4. Pour into prepared casserole dish. Reduce heat to 350 degrees.
5. Combine last 4 ingredients and sprinkle over yams. Decorate top with whole pecans.
6. Bake uncovered for 40 minutes until heated through and top is lightly browned.
