Budget Recipes – Baked Chicken and Potatoes

If you pay attention to what is on sale at the grocery store, it becomes easier to stay within your budget. Just wait until your grocery store has both foods on sale.

Many people would consider chicken and potatoes, (together, or separately) to be “comfort foods”. There is something satisfying about the combination of these two ingredients, whether they are baked or fried.

Instead of taking your family to KFC for a dinner of fried chicken and french fries, you can serve them something a whole lot healthier for dinner. Try the Budget Recipe for Baked Chicken and Potatoes.

Those are the two most important ingredients that you need to make this simple recipe that I found at Cooks.com. They call it “Oven Baked Chicken and Potatoes”.

You Will Need

Six to eight pieces of chicken

Four medium potatoes

One can of cream of celery soup (or cream of chicken soup, if you prefer)

What You Will Need To Do

Step One: Get a 9 by 13 inch casserole dish.

Step Two: Put the chicken breasts into the casserole dish, arranged so that there is a little bit of space between them.

Step Three: Cut the potatoes into thick slices. Put the potato slices next to, on top of, and underneath the chicken. In other words, scatter the potato slices through the casserole dish. Make sure they are not all clumped together.

Step Four: Put a small pot, or saucepan, onto the stove. Pour the soup into the pot, and add the amount of water that the can recommends you add to it. When the soup is heated, pour it over the contents of the casserole dish.

Step Five: Cover the casserole dish with aluminum foil. Put it into the oven for 45 minutes at 350 degrees (or until the chicken is done). Take the aluminum foil off of the dish for the last ten minutes of cooking time. After this dish is ready, you may want to set it aside for a minute or two before serving, so that it will not be too hot for your family to eat.
