Fall weather is starting to appear. On cool, or cold, nights, it can be nice to make a hot meal for your family to enjoy at dinner time. If you pay attention to the sales at your local grocery store, you can make a tasty meal that will be within your budget. Try this recipe for Chicken and Rice Casserole.
Casseroles are nice for many reasons. They are fairly simple to make. They are a great way to “sneak” some vegetables onto the plates of picky eaters. They can be made ahead of time, frozen, and quickly heated up once more on a night when you are too busy to make a meal that takes a ton of preparation time.
The current sales paper at Vons has deals that are good from September 21, 2011, through September 27, 2011. Right now, Vons has Eating Right brand boneless skinless chicken breasts on sale for $1.97 a pound. A five pound bag of Safeway long grain white rice is $3.39. Campbell’s Condensed Soup is 10 for $10.00, which makes them $1.00 each. (This is for the 10.5 to 11.5 ounce cans). As always, you have to use your Vons Club Card in order to get these deals.
To me, these ingredients suggest comfort food that will warm up your family. I found a recipe for “Cheesy Chicken and Rice Casserole” from Allrecipes.com. Personally, I would alter the recipe a bit, in order to get some veggies in there!
You Will Need:
Four skinless boneless chicken breast halves
Two cups of white rice
One (10.5 ounce can) of Campbell’s condensed cream of chicken soup
Two cups of shredded Cheddar cheese
Three slices of soft bread
One package of frozen broccoli
Salt and Pepper (to taste)
What You Will Need to Do:
Step One: Preheat your oven to 350 degrees
Step Two: Brown the chicken breasts in a skillet on the stove. Add butter or cooking oil if needed. Add salt and pepper (to taste).
Step Three: Cut the bread into cubes.
Step Four: When the chicken is browned, cut it into bite sized pieces.
Step Five: Get a 9 x 13 inch baking dish. Put in the chicken, rice, and broccoli. Mix in the can of condensed cream of chicken soup. Add the shredded cheese over the top. Place the bread cubes over the cheese.
Step Six: Put the casserole into the oven for 20 minutes (or until the cheese is melted). Serve!
