Budget Recipes – Easy Chicken Stir Fry

wok What are you having for dinner tonight? How about something that is quick to make, easy to do, tasty, and inexpensive? If you pay attention to what is on sale at the grocery store, you can create a dinner that won’t break your budget. Tonight, try out “Easy Chicken Stir Fry”.

You may not be aware of this, but Albertsons and Jewel are owned by the same company. Your local grocery store is either called Jewel, or is called Albertsons, based on where the store is located in the United States. I grew up in the Midwest, where the grocery store was called Jewel. Now, I live in California, where the store is called Albertsons. Based upon this, I am assuming that the weekly sales will be pretty much the same for both stores.

The current weekly ad for Albertsons runs through September 13, 2011. Food that is on sale this week includes: Fosters Farms Chicken Strips are 2 packages for $7.00 (6 oz packages), whole white or baby bella mushrooms (8 ounce package) for $1.99 each, one pound of fresh green beans for $1.99 each, and Albertsons rapid rice (8.8 ounce package) for $1.99. To get these prices, you have to use your preferred savings card.

This immediately made me think of the “Easy Chicken Stir Fry” that my husband makes. It is similar, in some ways, to the “Easy Stir-Fry Chicken & Broccoli” recipe on Cooks.com.

The recipe we use is super simple, and cooks really quickly. It isn’t something I would describe an asian inspired recipe, but it tastes good and is very filling.

You will need:

1 package of Fosters Farms chicken strips

1 package of fresh white mushrooms

one half-pound of fresh green beans

one green pepper (or red pepper)

one zucchini

one third of a cup of unsalted butter (we use this instead of a cooking oil for this dish)

black pepper (to taste)

optional: one package of rapid rice

Step One: Cut up the vegetables. The green (or red) pepper should be cut into strips. The zucchini should be cut into bite sized pieces. If the green beans are large, then cut them into bite sized pieces too. Mushrooms will shrink a bit, so it is up to you if you want to cut them into smaller pieces or not.

Step Two: Put your wok, or a very large frying pan, on the stove. Throw in the pepper, zucchini, mushrooms and green beans. Add the chicken strips. Scatter the chunks of butter around the wok, so that it isn’t all in one place. Sprinkle in as much black pepper as you like.

Step Three: Turn on the heat, and stir everything with a spatula until it is done cooking. The butter should melt over everything as you cook. This will smell wonderful!

Step Four: (optional). When we make this recipe, we don’t actually serve it over rice. If you want to, then follow the directions on the package of rapid rice. Serve!
