Fall is the perfect time for some campfire cooking. Whether you like to use a fancy grill or rough it using only a stick, there are several recipes that you can try. Nothing beats the flavor of campfire cooking, and all of that outdoor air is one of the best seasonings for hunger.
Even kids can cook over a campfire when you hand them a stick. Don’t limit their creations to just marshmallows, though. Try hot dogs and bannock, which is bread dough that you wrap around the stick. Just make sure to supervise children, since hot pointy sticks and even hotter food being waved around on hot pointy sticks can be dangerous.
The next step up from cooking food on a stick is cooking food in foil. You can make your own little oven out of the aluminum foil. Either wrap the food outright, or turn the foil into a bag. Actually, you can even purchase the bags ready made, but I think that is a little overkill. Practically any kind of food that would normally go in the oven can be cooked in foil, with the exception of messy batters. Some of the best suggestions include corn on the cob, potatoes and other vegetables, chicken, pocket pizza, beef, steak, baked apples, you name it.
If you don’t mind bringing along a portable grill that will work over a campfire, then you may have even more options for meals at your disposal, such as hamburgers, shish-kabobs, barbecue chicken and any other food that you might normally cook on your grill at home. If it can go on a large grill, you can cook it on the portable one. Try grilled pizza for a real treat.
With a dutch oven, you will have all of the bases covered, including casseroles and batter that wouldn’t be able to be cooked any other way. Although the dutch oven can be heavy to lug around, if you are doing some stationary camping and have a large group to feed, there is nothing better. Cook up some stew, meat loaf, even corn bread and coffee cake.
