Double Chocolate Zucchini Bread

Oooh, does my house smell good today. I just finished baking two loaves of double chocolate zucchini bread. The aroma reminds me that the holidays are coming soon. Now the only question is do I freeze one or leave them both out for the family to gobble all up? Zucchini bread is a lot easier to make than you might think. The most tedious part is grating the zucchini, but I have a short cut for you. I use the grating attachment on my food processor, which makes the grating a very quick step. Most food processors come standard with … Continue reading

Butter Biscuits

These yummy biscuits even taste great either warm from the oven or at room temperature the next day. They work well for dinner or breakfast. Since these biscuits hold their shape well instead of becoming crumbly, they can even be used as “rolls” for small sandwiches. Make several batches of biscuits to feed a crowd or freeze for a quick addition to dinner. For best results, cut the biscuits and freeze the dough before baking, but you can also bake them first and reheat in the microwave. Makes 12-14 large biscuits Ingredients: 4 1/3 cup all purpose flour (I used … Continue reading

Ideas for Leftover Bread

My parents don’t eat a lot of bread. However, my daughter loves the carb-rich staple, so my mom and dad stocked up on various breads while we were visiting them earlier this month. Still, my mom was adamant that we consume every bit of bread before we left, so it wouldn’t go to waste. No easy task considering I’m not a big fan of starch. Not wanting to upset my mom I did some research and found a couple of incredibly delicious ways to use up extra bread. The following recipes are simple and tasty enough to even get non-bread … Continue reading

More Tropical Treats: Pineapple Quick Bread

Most of us are familiar with the taste of banana bread, zucchini bread and pumpkin bread, but when was the last time you sunk your teeth into a sweet piece of pineapple bread? The popular tropical fruit, which is often associated with exotic libations, can really add a punch to a traditional quick bread recipe. Growing up in Hawaii my grandfather would add pineapple to just about all of his recipes (pineapple shrimp, pineapple chicken, grilled pineapple kabobs, etc.). Ironically, it was after devouring a batch of his homemade pineapple Popsicles that I discovered (after being rushed to the pediatrician’s … Continue reading

Bread Machine Wheat Rolls

These are by far the absolutely best bread machine rolls that I have tried. I make them often, at least once or twice a week, and they go quickly in my home. In fact, I’ve had to make extra batches of these rolls and send them home with guests. My eldest child is now an expert at forming them. The rolls are so easy to make, because you use a bread maker to form the dough and put it through the first rise. The recipe has the added goodness of powdered milk, which gives it a smooth texture as well … Continue reading

Lemony Scones

This is a great breakfast dish to welcome in Spring. These scones have a lightly lemony taste. What’s better, is that this is a great recipe for kids to help you prepare. I always make my scones by hand–as that will typically prevent over mixing, and besides, what kid doesn’t love to mix dough by hand? The secret to great scones is all in the mixing, and the ingredients, but more in the mixing. How you mix the dough, and in what order you mix the dough, will have a great effect on the results. If you mix too much, … Continue reading

National Banana Bread Day

Every once in awhile I like to blog on a silly food holiday. I don’t necessarily celebrate all my silly food holidays although I admit that if I can squeeze in some homeschooling along with cooking–I’m usually game. Sadly, I dropped the ball. Yesterday was National Banana Bread Day. But I was out doing the family’s shopping for the week. I completely neglected my e-mail informing me that February 23 is National Banana Bread Day. The reason this is a travesty is because it just so happens that I have the best banana bread recipe in the world. It’s one … Continue reading

Pumpkin Walnut Biscuits

I find that fresh homemade bread is an often overlooked part of the Thanksgiving meal. Most people either just buy bread, or buy frozen rolls to stick in the oven so that it seems homemade. After all, your oven may be in use for a whole bunch of other stuff. However, I find that homemade bread almost completes a meal. You can make bread (including these biscuits) a day or two before and they’ll still taste fresh. These biscuits are lightly sweetened but not too much so. This is a recipe from my favorite magazine, Family Fun. It is ‘sneaky … Continue reading

Delicious Cranberry Bread and Cranberry Muffins

I tried out this recipe last year and now it is a family holiday favorite. I love baking with cranberries in part because they lend such a unique flavor to the finished product, balancing the sweetness and in part because I think cranberry laden breads make for pretty table fare. White Chocolate Cranberry Bread ½ cup butter flavored shortening 1 cup sugar 3 eggs ½ cup buttermilk 3 tablespoons orange juice 1 teaspoon grated lemon peel 1 teaspoon vanilla extract ½ cup vanilla or white chips, melted and cooled (Tip: You can get directions for melting the chips on the … Continue reading
