Beef Pot Pie

Who doesn’t love a good pot pie? And with so many variations, there’s a recipe for everyone. For some, pot pie is found exclusively in the frozen section (think Marie Callender’s here) and is served as an easy and hearty weeknight dinner. For others, the only way to go is homemade. Pot pies are a great way to make use of leftover meat. Personally, I enjoy making pot pies because they are fairly easy to prepare and usually something my whole family will enjoy. I have attempted making my own piecrust, but have found little difference between my version and … Continue reading

Shepard’s Pie

Shepard’s pie is traditionally a British dish that consisted of minced ground lamb covered in mashed potatoes. It has been a favorite dish to serve to a large group of people. I personally don’t care for lamb, so I searched for a Shepard’s pie recipe that contains ground beef. But technically, if you use ground beef instead of lamb (as most Americans do), it is called cottage pie. You can even use fish and create what is known as a fisherman’s pie. Regardless of what type of meat you use and what you call it, I think you will like … Continue reading

Mexican Corn Bread

Have you heard of Mexican Corn Bread? Until I had this dish I did not know what Mexican Corn Bread was. The title makes it sound like a simple corn bread, but it’s actually a hearty casserole made mostly from ground meat, cheese, corn and corn meal. If you think this description sounds like a meal you’d like to attempt, read on for what you’ll need to make it and the directions to follow: Ingredients: 1 cup corn meal 1/4 tsp baking soda 1 cup milk 2 eggs 2 cans cream style corn 1/2 tsp Tony Chachere’s Original Creole Seasoning … Continue reading

Noodle Kugel

When I see the word “noodle” in a recipe, I am pretty much instantly confident I’m going to like it. Unless it contains ingredients that are too spicy for my taste, or seafood I’m not familiar with, I’ll generally file it away for future use. Why? Because noodles are delicious. They represent the ultimate in comfort food for me. And we all need a little comfort food now and then. I saw this recipe on television this morning. It looked delicious, and had apparently been created generations ago. What could be better? I’m a sucker for old family meals. A … Continue reading

Baked Spaghetti

When I was getting married, my matron of honor gave me some of her favorite recipes. One of her recipes was for making Baked Spaghetti. This dish was one of the first meals I made for my husband after we were settled in our small apartment, and we both thought it was a great dish. Baked Spaghetti is full of veggies! It also has plenty of cheese, mayo, and sour cream to make it yummy, but of course you can substitute yogurt for sour cream and make it a bit less fattening. I like to bring this dish to families … Continue reading

Homemade Chili Macaroni

My family loves the Hamburger Helper meals. The most popular one is Chili Macaroni. Hamburger Helper is a great way to save us some time in the kitchen. Most of the time, you just need to add the meat, usually hamburger, turkey or chicken, and sometimes milk. Add a can of vegetables or maybe a salad and some rolls. You can make it Mexican or Italian. Your cooking time is cut down to less than thirty minutes. I have been making Chili Macaroni from a recipe instead of a box for a long time now. My kids love the taste … Continue reading

Left Over Beef Casserole

I fixed Roast Beef for dinner the other night. I like to buy the roasting bags, because I can basically put it in there and forget it until the timer dings. I had some beef left over, so I stuck it in the fridge hoping I would get creative tomorrow. No one likes just warmed up beef here, so I had to think of something. The next day, I fixed the recipe below and the family finished off the roast without any complaints. I hope it works for you. You will need: Roast- about two cups, diced 1 can of … Continue reading

There have been times when I was either too busy or sick and was unable to fix a dinner. When I cook dinner everyday for my family, I fix a large amount of everything in order to fill everyone up. When I am sick or I am busy, I fix the Beef Stew Casserole. It is a complete meal all in one. You … Continue reading
