Layered Pork Chops with Potatoes and Onions

This is a great week night meal because it’s easy to prepare and simmers on the stove for quite awhile. Not quite as good as throwing it in the oven, but the simmering will yield meat that’s super tender. The layered parmesan adds complexity and just plain good taste to the dish. Pepsi Makes Meat Taste Better?

I don’t know what it is about adding cola to a marinade that makes the meat turn out better. I had recently discovered this trick when I started making my mother in law’s pot roast and adding cola to the liquid instead of water. Maybe I’m just biased towards Pepsi. This delicious fall/winter dish combines sweet and salty for a fantastic flavor. Marinating is optional, but it yields a more tender finished product. Orange Pork Roast If you don’t have a crockpot you could easily make this in your oven. INGREDIENTS: 4 lb pork shoulder roast, trimmed 1/2 tsp salt 1/8 tsp pepper 1 can frozen orange juice concentrate 1/4 cup honey 1/8 tsp ground cloves 1/8 tsp ground nutmeg DIRECTIONS: 1. Season roast with salt and pepper and place in the crockpot. 2. In a small bowl, combine orange juice concentrate, honey, cloves and nutmeg, then pour over pork. 3.
