1,2,3 Chili

I’m currently practicing a lower-carbohydrate eating plan. You can imagine my excitement when I remembered that chili is low-carb! I created this recipe today, utilizing what was in my cabinet. I didn’t have chili powder and didn’t have a chili seasoning packet, so I had to wing it. The result was a delicious, slightly spicy chili I’ll be making again and again. I hope you enjoy it. Oh, and don’t let the long list of ingredients freak you out—it’s spices that you likely have in your own cabinet. If not, and if you have a packet of chili seasoning or … Continue reading

Green Tortilla Soup–YUM

I’ve been in a soup mood for the past few weeks. It’s partially because my family has been passing a cold around for about a month. It’s also because the temperatures have finally cooled off in Southern California, and nothing warms the stomach better than a delicious bowl of homemade soup. I saw this recipe today and had to share it with you. It combines two of my favorite things–soup and Mexican food–and turns them into a delicious recipe everyone will love. And the best thing is that this recipe is thick, like a stew or a chili even, making … Continue reading

Chicken Mug Pie

I watched Racheal Ray prepare this recipe on her show, 30 minute meals, a couple of months ago. So I made it for my family and they loved it. I liked the fact that it didn’t take to long to make,(under 30 minutes). Since everyone will be busy New Years Eve, I have decided to fix this for dinner before everyone arrives for the countdown. I’m going to serve this with a great big bowl of tossed salad and I won’t be running around trying to figure out what to do. So, if you have a big evening planned for … Continue reading

Freezer Cooking Soup and Stew Recipes For Those Cold Winter Months

With the cold autumn and winter months rapidly approaching, I thought it should be my freezer cooker queen duties to share with you a few of my favorite soup recipes for this time of year. I try to make hearty soups in the winter, to fill the stomach and warm the soul. There are two tips I have learned about freezing soup. First, allow the soup to cool completely before putting it into the freezer. Second, when storing soup, use plastic microwaveable containers to freeze. This way it can go from freezer to microwave without anything in between. Typically I … Continue reading

Never Tried Red Lentils?

I had never eaten lentils before I met my husband. And the ones I saw in the grocery store were green and looked a lot like little round beans. But my mother-in-law introduced me to red lentils. Used a lot in Middle Eastern cooking, red lentils nearly disappear when you cook them. The result? Satisfying, creamy soups that are healthy and choc full of vitamins. Red Lentil Soup: For this recipe you’ll need: 1 1/2 cup red lentils (look in the Middle Eastern section of your supermarket) 8 cups beef stock 2 medium sized onions 2 Tablespoons butter 1/2 Tablespoon … Continue reading
