Super Easy Recipes

Sometimes it’s the simplest recipe and the little touches that can make all the difference. Recently I decided instead of coating the fish fillets in rice crumbs to try something different and so simple and with few ingredients. Cajun and Coriander Fish Fillets Ingredients Olive oil for cooking 2 fish fillets (your choice- whatever type of fish you like best. I mostly use freshwater basa fillets. 1 -2 teaspoons Cajun spice I handful fresh coriander or 1-2 teaspoons dried coriander Method Sprinkle fish fillets with Cajun spice and chopped coriander. Dale’s Gluten Free Christmas Loaf Cake

This year instead of making one large Christmas cake as I usually do, I decided divide the mixture into two and make two loaf cakes. Since the cake tins were a little small for what I wanted, I used the tins Mick usually uses for making my gluten free bread. The idea of making to smaller cakes rather than one large one is that it will be easier to store and keep fresh. One won’t need to be cut till all of the first Christmas loaf is gone. Another advantage is if you get caught out and want a Christmas … Continue reading

Vegetable Pasta in Tomato Sauce

An online friend has been telling me recently that according to the diet she is on, pasta and meat together is a real no no. Of course, that cuts out lasagne and spaghetti bolognaise and so many other recipes. Someone else then asked how she manages to have pasta since she is gluten free and without combining the pasta with meat. Her answer was that she has vegetables with a bolognaise type of sauce but without any meat and rice pasta which is better for you anyway. Wheat and gluten are the sources of a lot of ailments today in … Continue reading

A Simple Edible Chistmas Gift

There’s nothing nicer than a gift someone has taken the trouble to make for you. At our recent Ladies’ Christmas evening at church to which a large number of ladies come faithfully every year, there was a display up the back of the hall of handmade gifts. Some included handmade wreaths for the front door made out of colored material, Christmas tree ornaments, the traditional Christmas cake, my chocolate ginger slice wrapped up in a basket of colored cellophane, and a patchwork quilt. There were others but I can’t remember them. Other ideas are bookmarks, photo frames, and children’s mobiles … Continue reading

Chicken and Lemon Fettuccine

Some nights all you want is to make something that is quick, filling and tasty. For that, pasta is an excellent choice. This recipe meets all of those criteria and for the gluten free you can still has pasta, it’s just rice pasta. The original version of this recipe that this was adapted from called for spaghetti but personally I find the gluten free spaghetti is hopeless, as it is so thin and doesn’t have a good texture, so I always prefer to use fettuccine instead. Of course it is entirely up to you and your preferences. Quick and Easy … Continue reading

Mick’s Mince Loaf

I love it when Mick decides to take to the kitchen and this is another of his specialties. In fact I have never made this recipe at all. The original recipe used a cob loaf and was not gluten free and we bemoaned the fact for a while that we could no longer have it. Then we thought why can’t we? And why does it have to be a cob loaf anyway? Wouldn’t a gluten free bread loaf work just as well? In fact we decided it might even work better. Mick decided to try it. He made a loaf … Continue reading

A Good Basic Recipe

Starting with a good basic recipe is important. From that point it’s easy to branch out and add your own individual touches or experiment. I’m a great one for experimenting in the kitchen. That’s often how the best recipes are created. This week I made the recent chocolate hedgehog slice I gave you. This was one Mick had made initially, but of course when I got near it I couldn’t leave it alone.Partly it was to do with what I didn’t have in the pantry at the time and sheer laziness in not feeling like going up to the shops … Continue reading

Make Mine Chocolate

Mick doesn’t often venture into the kitchen to cook. More often than not that is my domain. When he does, he usually makes something sweet and chocolaty. The other day he decided to make a sweet treat to take with us to the football. This is the one he made. Occasionally you get a slice that is rich and almost impossible to resist. I defy anyone to not want to come back to for a second piece of this one or even a third. So although I am giving you a quantity here for one slice, I suggest you double … Continue reading

Crock Pot Sweet Curry

Given the cheap bulk rump we bought recently here’s another crock pot recipe using beef. However if rump is not cheap in your area you can use blade, skirt steak or gravy beef. Just allow another hour in cooking time. This is one of those recipes that I made up on the spur of the moment. It is so easy because nearly everything goes in at the beginning and that’s it except for the yoghurt which is added in the last half hour. You will notice too it contains light agave nectar. This is a natural sweetener than can be … Continue reading
