I’m a big fan of lentils, kidney beans, black eyed beans and chick peas. They are a way of adding fiber to the diet without it causing too many complaints. Skewer Your Meat

Our barbecue gets plenty of use for cooking roasts as well as barbecuing. These recipes both go well on skewers on the barbecue, though you could also put them under the griller if you prefer. Although they take a bit of marinating time, you could be doing other things while they are marinating. Set a timer to remind you when they are ready. The advantage is they don’t take long to cook. Salmon Patties

My husband is a big fan of these salmon patties. For those on a dairy free or gluten free diets this is a good recipe. It will make about 12-13 patties. Creamy Mushroom Pasta – Gluten Free

Just because you’re gluten free doesn’t mean you have to forgo pasta. Rice pasta works well in hot dishes and pasta salads and is a good alternative. I usually use rice spirals. The only pasta I’m not fussed on in the gluten free version is spaghetti. It seems too thin, so I might use fettuccini instead. This is a quick dish to make. This recipe is one that is a gluten free adaptation of a recipe given to my mother years ago. It has been a favorite in our family ever since and works equally well hot with vegetables or cold.
