Good Morning, Eggs

I do not care much for eggs. I only eat eggs hard boiled, over easy, and in a quiche. My little one calls it breakfast pie even though I have been known to make it for dinner. You can make it any way you like. The main ingredients are eggs, milk or half and half, and then you add in cheese, vegetables, and or meat or all three. Below is a bit more of a complicated recipe but it is amazing. Just make sure to substitute to keep the fat content in check. Fontina and Herb Quiche Ingredients 18 slice(s) white … Continue reading

Low Fat Chicken Salad Recipes

When I think picnics and summer food fare, I think chicken salad. Am I the only one? It appears that chicken salad is everywhere this time of year. However, it is noted for being very high in fat. Well, this is one food that does not have to be high in fat to taste great or feel like a compromise. I have tried a few recipes here and there but these two are always popular. Asian Chicken Salad 4 cups of thinly cut or shredded cooked chicken 1/4 cup of peanut butter 1/4 cup reduced sodium soy sauce 2 tbsp … Continue reading

Light Summer Crock Pot Recipe

Just because it is summer does not mean the crock pot gets the season off. Most of us think of chili and casserole when it comes to crock pot fair. But, it doesn’t have to be that way at all! In fact, it will be nice to allow the crock pot to do the cooking so I don’t have to be in a hot kitchen for hours cooking. I love knowing dinner is done by just tossing in ingredients in the crock pot and letting it do its thing. But is it possible to make light summer time food in … Continue reading

Slushie and MilkShake Recipes

During the hot summer months nothing hits the spot like a good slushie or low fat milkshake. Make it healthier by adding plain or flavored yogurt, a dash of flax or wheat germ, or even powdered protein. Slushies are a great low fat dessert or snack. A good low fat milkshake will curb any craving for ice cream. You can get creative with both slushies and milkshakes. Basically you need ice and your choice of fruit for the slush or low fat or skim milk for the milkshake. Consider adding in frozen yogurt, low fat ice cream, or fat free … Continue reading

Low Fat Burgers

Burgers and summer go together like salt and pepper. I can hardly pass up a burger at summer cook outs. I always tend to regret it since I know the high fat content of a burger. Even if we go low carb one burger can still be over the top in fat content. This is especially true for grilled burgers since the more fat the better they grill or so I have been told. But does that really have to be the case? Do we really have to kill our diets because of a juicy burger and cheese? Not with … Continue reading

It’s Griling Time: Low Fat Burgers

It’s grilling time again! For many this weekend will be the first time in a long time they break out the grills. One of the first things people think about grilling for family and friends is the famous juicy burger. It is one of the few times a year I actually sit down to eat a burger. Ground beef is very high in fat and not always the best choice. However, lean ground beef is not always the best choice for grilling. Many complain that it gets dry. Who wants a dry burger? But there are ways to have your … Continue reading

My kids always get so excited when we grill out. There is just something about cooking outdoors that makes everyone happy. I love grilled chicken … Continue reading
