Cheap and Easy Party Food

No, I’m not referring to a bag of chips or day old donuts. While those are cheap and easy food items to contribute to a party, they might not be appreciated as much as the following easy and affordable dishes.

This weekend’s NFL conference championship games have many people planning big parties to cheer on their favorite team. In addition, many offices are planning pre-game shindigs on Friday. If you are required to bring a dish to pass, then consider whipping up one of the following simple recipes. Trust me; you’ll score big time by doing so.

EASY MEXICAN CASSEROLE

Ingredients:

1 1/2 pounds ground beef

1 package taco seasoning mix

1 (12 ounce) box of elbow macaroni, cooked

1 can of corn, drained

1 can of ranch style or pinto beans

1 (14 ounce) cans diced tomatoes

3 to 4 cups shredded Mexican blend cheese

Taco toppings: Sour cream, guacamole, black olives and salsa

Directions:

Preheat oven to 350 degrees.

Brown meat and add taco seasoning.

Mix all ingredients but cheese together.

Pour mixture into a greased 9 by 13-inch pan. Top with cheese and bake for 25 to 30 minutes.

Garnish each serving with taco toppings.

BBQ PORK SANDWICHES

Ingredients:

5 to 7 pounds boneless pork roast

2 tablespoons garlic salt

1 tablespoon black pepper

1 can Dr. Pepper

1 sliced onion

1 bottle of your favorite BBQ sauce

1 1/2 cups ketchup

1/2 cup brown sugar

2 tablespoons mustard

Rolls, bread or buns

Directions:

Season the roast with garlic salt and pepper. Place roast in a large slow cooker. Add onion and Dr. Pepper. Cover and cook for 5 to 7 hours on high or 7 to 9 hours on low.

In a saucepan, heat BBQ sauce, brown sugar, ketchup and mustard. Stir to combine.

When pork is done, shred with a fork.

Add BBQ sauce to slow cooker. Heat through.

Serve on rolls, bread or buns.
