Cheese Please!

If you are worried that your family members are not getting enough dairy in their diet, then these simple recipes will help set your mind at ease. Both feature nutritious and delicious cheese. What’s more, they couldn’t be easier to prepare.

The next time you are looking for a way to fortify lunch or dinner with all-American cheese, try these tasty treats:

BAKED HAM AND CHEESE

Ingredients:

2 frozen puff pastry sheets, thawed

2 tablespoons Dijon mustard

2 tablespoons mayonnaise

1/2 pound deli ham, thinly sliced

8 slices Swiss cheese

1 egg

2 tablespoons water

1 tablespoon poppy seeds

Directions:

Preheat the oven to 450 degrees.

Place a piece of parchment paper on a sheet pan.

Lay one sheet of puff pastry on a floured board and carefully roll it out to 10 by 12 inches.

Place the pastry on a sheet and brush the center with the mustard and mayonnaise leaving a 1-inch border around the edge.

Place a layer of ham and then cheese, also leaving a 1-inch border.

Brush the border with the egg wash.

Place the second sheet of puff pastry on the floured board and roll it out to 10 by 12 inches.

Place the second sheet on top of the filled pastry, lining up the edges.

Cut the edges with a small, sharp knife and then press together lightly.

Brush the top with egg wash, sprinkle with poppy seeds and cut a few slits in the top to allow steam to escape.

Bake for 20 to 25 minutes, until puffed and golden brown.

Allow to cool for a few minutes before serving.

CHEESE CURD SALAD

Ingredients:

1 medium head of lettuce

1 cup cooked peas

1 cup celery, sliced

8 ounces Cheddar cheese curds

1/2 cup sweet pickle relish

1/4 cup green onions, chopped

1/2 cup mayonnaise

2 tablespoons chili sauce

3/4 teaspoon salt

2 tomatoes, quartered

Directions:

Wash lettuce and remove outside leaves for garnish.

Break remaining lettuce leaves into bite-sized pieces and place in a serving bowl.

Add remaining ingredients and toss lightly.

Garnish with whole lettuce leaves before serving.
