Cheese Quesadilla and Guacamole – Ole!

Do you like Mexican food? I love it. All of it. And I especially love it topped with a nice helping of guacamole. Guacamole is a Mexican dip made from fresh avocados and spices. It’s creamy, flavorful, and the delightfully simple dip to make. I love it on just about anything, especially tacos, nachos, quesadillas, and salads. After you try this recipe, you likely will too!

Ingredients:

5 avocados

3 Tablespoons sour cream

½ red onion

1 tomato

1 ½ tsp. kosher salt

½ lemon juiced

1-2 limes, juiced

¼ cup fresh cilantro chopped

2 Tablespoons Salsa

To Make:

Cut the avocados in half and remove the seed. Remove the flesh from the avocado and place in a medium bowl.

Add sour cream to bowl

Mash the avocado and sour cream together to desired consistency. Can leave it a bit chunky if desired or mash it all the way – it’s delicious either way!

Peel and chop ½ red onion into small dices and add to bowl. If you don’t have red onions, you can substitute white or yellow.

Seed and dice tomato and add to bowl

Add lemon juice, limejuice,(add juices slowly to make sure your guacamole doesn’t get too mushy) cilantro, salsa and kosher salt to bowl. Mix thoroughly.

*Serve with tortilla chips for a yummy treat or top your favorite Mexican dish.

*If you like a spicier guacamole, add a dash of cumin and some red pepper or Tabasco to suit your taste.

*If you prefer, omit the sour cream. You’ll still have a great guacamole.

Simple Quesadilla:

The perfect dish to top with guacamole:

Ingredients:

1 large flour tortilla

1 Cup Cheddar Cheese -may substitute your favorite cheese; i.e. Monterey jack.

1 Tablespoon Butter

To Make:

Top one half of your tortilla with cheese.

Fold tortilla over to make a half moon.

Melt butter in a large sauté pan.

Place quesadilla in pan and cook on medium high until desired color. Flip carefully with a spatula and continue cooking until cheese is melted and tortilla is lightly browned in spots.

Cut into 4 pieces and top with guacamole and salsa. Ole!
