Cheesy Broccoli and Potato Soup
1/2 cup onion, chopped
1/2 cup celery, chopped
2 tablespoons butter
1/4 cup flour
4 cups potatoes, peeled and diced
3 cups broccoli, chopped and steamed crisp/tender
3 cups chicken broth
2 cups cheddar cheese, shredded
2 cups milk
1/3 teaspoon paprika
Dash pepper
Salt to taste
Fresh parsley, minced
In a large saucepan, sauté the onion and celery in butter until tender. Add flour, pepper, salt, and paprika, blending until smooth. Add chicken broth, milk, and potatoes, stirring until mixture boils and thickens. Reduce heat, cover, and simmer for 15 minutes or until potatoes are tender. Add cheese and steamed broccoli, cooking on low until cheese is melted. Pour into serving bowls and sprinkle with parsley.
