Cheesy Stuffed Peppers
Very filling. Should bring back memories for many of us who were served this dish when we were young.
INGREDIENTS:
6 medium green peppers
1 1/2 lb ground beef
1 medium onion, chopped
1/2 tsp salt
2 1/2 cup chopped tomatoes
2 cup shredded cheddar cheese
DIRECTIONS:
1. Cut tops from peppers and remove seeds.
2. Place in a saucepan and cover with water.
3. Bring to a boil and cook for 6-8 minutes.
4. Meanwhile, brown beef, onion and salt in a skillet over medium heat. Drain.
5. Cool slightly, add tomatoes and cheese.
6. Drain peppers and stuff with meat mixture.
7. Place in an ungreased baking dish. Bake, uncovered, at 350 for 20 minutes.
