My New Year’s resolution this year was the same as every year – lose weight! But there are two times of the year when I refuse to count calories – the holidays (Thanksgiving-Christmas-New Year’s) and Super Bowl Sunday.
This weekend is known as Wild Card Weekend in the NFL and although we still have several weeks until the Super Bowl, you may already have hungry football fans invading your house.
Here is another recipe that is sure please the crowd – Cheesy Tortilla Spirals! I know for a fact this will be a big hit because I served the spirals last year at our Super Bowl party and everyone raved about them!
Your shopping list will be: 1 package of Stouffer’s Creamed Chippped Beef, 2 packages of cream cheese (3 ounce containers), shredded cheddar cheese, lime juice, flour tortillas, green onions, fresh cilantro, ground chili powder, and ground cumin.
Preheat your oven to 400 degrees Fahrenheit. In a medium bowl, combine 1/3 cup of shredded cheddar cheese, 6 ounces of cream cheese, 2 teaspoons of lime juice, 1 teaspoon of ground chili powder, and 1/2 teaspoon of ground cumin. Mix well then add the package of creamed chipped beef, 2 tablespoons of chopped cilantro, and 2 tablespoons of chopped green onion. Mix well. Distribute the mixture over one tortilla. There should be enough of the mixture to cover about 10 tortillas. Roll up the tortilla with the seam side down. Once all the tortillas have had mixture spread on them and rolled, place them on a cooking sheet. Shower 1/4 cup of cheddar cheese on top of the tortillas. Place tortillas in oven for 7 minutes or until the cheese melts. Let stand for about 5 minutes once it is removed from the oven. Slice each tortilla into one-inch strips.
These are great served with salsa, sour cream, guacamole or alone.
