Cherry Cheese Bars
Make these for the church bake sale! They’re always a hit!
INGREDIENTS:
1 cup Walnuts
1 1/4 cup Flour
1/2 cup Brown sugar, packed
1/2 cup Shortening
1/2 cup Coconut, flaked
8 oz Cream cheese, softened
2/3 cup Sugar
2 large Eggs
2 tsp Vanilla
1 can Cherry pie filling
DIRECTIONS:
1. Heat oven to 350. Grease 13×9 pan with butter flavor crisco. Set aside.
2. Chop 1/2 cup nuts coarsely for the topping. Chop remaining 1/2 cup finely.
3. Combine flour and brown sugar. Cut in shortening until fine crumbs form.
4. Add 1/2 cup finely chopped walnuts and coconut. Mix well. Remove 1/2 cup. Set aside.
5. Press remaining crumbs in bottom of pan. Bake at 350. for 12-15 minutes, until edges are lightly browned.
6. Beat cream cheese, sugar, eggs and vanilla in small bowl at medium speed until smooth.
7. Spread over hot baked crust. Return to oven. Bake 15 minutes longer.
8. Spread cherry pie filling over cheese layer. Combine reserved coarsely chopped nuts and reserved crumbs.
9. Srinkle evenly over cherries. Return to oven. Bake 15 minutes longer. Cool. Refrigerate several hours. Cut into bars.
