Cherry Pecan Shortbread
A nice Christmas sweet.
INGREDIENTS:
1 cup flour
1/2 cup cornstarch
1/2 cup icing sugar
3/4 cup butter, softened
3/4 cup chopped candied cherries
1/2 cup chopped pecans
DIRECTIONS:
1.Combine the flour, cornstarch, and icing sugar. With large spoon, blend in butter. Mix in nuts & cherries.
2. Work in with hands until soft dough forms. Shape dough into smooth roll, 1 1/2 ” diameter.
3. Wrap in plastic wrap. Chill 4 hours. Cut into 36 cookies. Put on ungreased cookie sheet.
4. Bake at 375 for 8 to 12 minutes, until edges lightly brown.
Prep: 15 minutes
Cook: 12 minutes
