Most chocolate cookies are white with big chocolate chunks. This cookie is uniquely delicious because the cookie itself is chocolate, while the chunks spread throughout are white. Delicious by themselves, this cookie is big and can also easily be paired with vanilla ice cream and made into an ice cream sandwich. No matter how you choose to prepare and serve these cookies, they are certain to be gone in a flash.

For this recipe you’ll need:
½ pound unsalted butter, at room temperature
1-cup granulated sugar
1-cup brown sugar
2 eggs, at room temperature
2 tsp. Pure Vanilla Extract
2/3 cup unsweetened cocoa powder
2 cups all-purpose flour
1-teaspoon baking powder
1-teaspoon baking soda
1-teaspoon salt
2 cups white chocolate chunks
To make this recipe:
Preheat oven to 350-degrees F.
Using a stand mixer, (or handheld mixer) mix together the softened butter, granulated sugar, and brown sugar until well combined. Add the eggs, one at a time, and then the vanilla extract and cocoa powder, mixing between additions.
Next, combine the flour, baking powder, baking soda, and salt in a bowl. Sift together and add to the sugar mixture. You’ll want to mix this on low speed and remember not to over mix at this point to avoid a tough batter.
Using a wooden spoon, mix in the white chocolate chunks by hand.
Line a sheet pan with parchment paper. Use an ice cream scooper to scoop equally portioned cookies and place on the cookie sheet (8 at a time). Wet your hands and gently press on each cookie to flatten slightly.
Bake in preheated oven for exactly 15 minutes. Cool on a wire rack before eating or turning into ice cream sandwiches.
