Chicken and Vegetable Chowder
1 pound of chicken breast, boneless, skinless, and cut into bite-size pieces
1 cup of baby carrots cut in half
1 cup of mushrooms cut in half
1/2 cup onion, chopped
1/2 cup water
1/4 teaspoon garlic powder
1/8 teaspoon dried thyme
14 1/2-ounce can chicken broth
10 3/4-ounce can cream of chicken and broccoli soup
1/2 cup milk
3 1/2 tablespoons flour
9-ounce package frozen broccoli, thawed
In a crock-pot, add the chicken, carrots, mushrooms, onion, water, garlic powder, thyme, and chicken broth, mixing well. Cover and cook on low or 7 to 9 hours or until chicken is cooked through. Drain off fat from the top of the crock-pot. In a bowl, mi the soup, milk, and flour, whisking until smooth. Add soup mixture with thawed broccoli to crock-pot. Cover and cook 30 minutes.
