Chicken Souvlaki Gyro Style

For this tasty recipe, you will need balsamic vinaigrette, lemon juice, dried oregano, ground black pepper, four skinless, boneless chicken breasts, one large cucumber, kosher salt, plain yogurt, sour cream, rice vinegar, garlic cloves, olive oil, fresh dill, Greek seasoning, pita rounds, romaine lettuce, one red onion, one medium tomato, kalamata olives, pepperoncini peppers, and crumbled feta cheese.

To prep for this recipe, you will need to seed and shred the cucumber. You need enough for 1/2 cup. Mince one garlic clove and chop the fresh dill. Cut your lettuce into 1/4 inch slices and slice your red onion and tomato.

To make the souvlaki marinade, you will need to combine 3/4 cup of balsamic vinaigrette, 3 tablespoons of lemon juice, 1 tablespoon of dried oregano, and 1/2 teaspoon of ground black pepper. Mix well. Place the four chicken breasts in a large resealable plastic bag and pour the marinade over. Seal, shake well to coat the chicken and place in the refrigerator. The chicken needs to marinate at least a hour.

To make the tzatziki sauce, you will need to mix 1/2 cup of shredded cucumber with 1 teaspoon of kosher salt. Let that sit for 5 minutes. In a bowl, combine 1 cup of plain yogurt, 1/4 cup of sour cream, 1 tablespoon of lemon juice, 1/2 tablespoon of rice vinegar, and 1 teaspoon of olive oil. Mix well then add the minced garlic clove, 1 tablespoon of chopped fresh dill, and 1/2 teaspoon of Greek seasoning. Squeeze the water from the shredded cucumber and stir it into the mixture. Season that with kosher salt and pepper to taste then refrigerate.

Preheat an outdoor grill on high. Place the marinated chicken on the grill. Cook about 8 minutes on each side until done. Remove the chicken from the grill and allow it to cool before slicing it into strips.

If you want, you can place the pita rounds on the grill for a couple of minutes to warm them. Place the pita round on a plate and top with sliced chicken, lettuce, onion, tomato, olives, pepperoncini peppers and feta cheese. Pour a little of the tzatziki sauce over it and enjoy!
