Chicken With Saffron Rice-A one-pot meal that feeds an army!

If you’ve got a large family, or if you’re keen on leftovers, then this meal is one you’ll want to try. It’s quick. It’s simple. And most of all, it’s delicious. It uses a store-bought whole chicken that is already cooked. What could be simpler? I use them all the time. They are a huge time saver, and you don’t have to pull out your old meat thermometer to make sure it’s cooked correctly!

For this recipe you’ll need:

4 Tablespoons Butter

3 (5 ounce) packages Mahatma brand Saffron Rice

4 Cups Chicken Broth

1 Rotisserie Chicken (about 2-3 lbs.) from your grocery store (pre-cooked and ready to serve)

To Make This Recipe:

Take the meat off of the chicken, as if you were going to make chicken soup. Set aside.

In a large cooking pot, melt the butter. Add rice and stir. Add chicken. Add chicken broth. Bring to a boil. Cover and simmer for 20 minutes.

Fluff with a fork then serve.

Tips:

This works best if you use cold rotisserie chicken. If the chicken is hot, cook the rice as directed above and then add in the chicken after the rice is cooked.

Rotisserie chickens, already cooked, can be found in the deli section at nearly every grocery store now. They are delicious and convenient.

The saffron rice comes seasoned so you don’t need to add any additional spices.

This meal is delicious served with a salad or freshly steamed vegetables.
