When we’re cooking meals every day, it’s easy to get so stuck in the rut of using the same tried and proven recipes that we forget to venture out and try something new, or we simply can’t be bothered. I have a few books where I have written out some of my favorites over the years. The other day I was looking for another recipe, when I came across this one. ‘Oh, that used to be good and we haven’t had that in ages ‘I said to my husband who agreed. So I made it that week.
One thing I have found is, it is always good to have a number of different recipes for ground beef. My husband will meat any meatball or other mince dishes with the exception of meatloaf. So I have lots of meatball recipes. Here is one that doesn’t take a lot of time to prepare.
Chili-Corn Meatballs
4 ounces margarine
Meatball mix
Mix together
1 pound minced beef
Quarter of a cup of rice crumbs (you can use breadcrumbs if you don’t have a gluten allergy)
I medium onion chopped
Salt and pepper to taste
1 egg
1 cup grated cheese
Sauce
1 teaspoon chili powder ( make sure it is gluten free)
1 tablespoon gluten free plain flour or corn flour
16 ounce can diced tomatoes
16 ounce can corn niblets, drained
Salt and pepper to taste
Combine all meatball mix ingredients. Shape into 10-12 meatballs. Chill in fridge.
Melt margarine in pan. The add meatballs. Brown meatballs, shaking pan occasionally so they do not stick. Cook for 10-15 minutes depending on size of meatballs. Remove meatballs from pan.
Pour off all margarine except for 1 tablespoon. Blend with flour or corn flour. Cook I minute. Add tomatoes, corn and stir still sauce boils. Season with salt and pepper. Return meatballs to pan and heat through
Serve accompanied with mashed potatoes or rice. Severs 4.
