I always thought that scones were too hard to make. Then I discovered that it is okay to cheat a little bit. You can produce yummy scones that take just a few minutes to produce. No one will ever know, unless you tell them!
I started with a basic chocolate chip scone. My family loves chocolate chips in everything. Having chocolate chips somewhere in breakfast is a real treat. While we don’t do it all of the time, we will have the occasional chocolate chip muffin or chocolate chip pancakes. One time I even incorporated them into theme waffles. They became the “seeds” for watermelon waffles, which were not much more than regular buttermilk waffles with layers of food coloring.
Once I got the chocolate chip scones down, I decide to try cinnamon ones and keep everything simple. I substituted a teaspoon of cinnamon for the chocolate chips. The cinnamon scones are a bit drier, but we liked them that way because the texture offset the flavor and made it seem more scone-like, so I left the recipe alone.
Feel free to experiment with different ingredients, such as blueberries or raisins.
Chocolate Chip Scones
Ingredients:
2 cups of baking mix, such as Bisquick
1/2 cup semisweet chocolate chips
1/3 cup heavy cream (also called whipping cream) plus some additional
3 tablespoons sugar plus some additional
1 egg
1 teaspoon vanilla
Directions:
Preheat your oven to 425°F and spray a cookie sheet with cooking spray. Stir the baking mix, chocolate chips and sugar together in a bowl. Measure out 1/3 cup whipping cream, then add the egg and vanilla to the cream and mix lightly until blended. Add the wet mixture to the dry and mix until the dough forms.
Pat the dough into an eight-inch circle on cookie sheet. Then brush the dough with a little bit of cream. Sprinkle some sugar on top. Using a sharp knife, cut the circle into eight wedges, but don’t separate the circle.
Bake the scones for 12-14 minutes or until they are golden brown. Allow them to rest for five minutes and then separate the scones and transfer them to a cooling rack. They are wonderful warm or at room temperature.
