Growing up my mom would make hundreds of snowball cookies at Christmastime. Once they were done baking she would allow me to roll them in powered sugar, and then my brothers had the task of packaging them up for family and friends. This year I plan to carry on the family tradition of baking snowballs, but will be adding a few new cookie ball recipes to the mix. The following cookies are just as easy to prepare as the original snowballs (your kids will have a blast helping out), but they feature added flavors and textures traditional snowball cookies lack.
CHOCOLATE ORANGE BALLS
Ingredients:
1 9-ounce box of vanilla wafer cookies
2 1/4 cups powdered sugar
1/4 cup unsweetened cocoa powder
1/3 cup orange juice concentrate
1/4 cup light corn syrup
1 1/2 cups pecan pieces
Directions:
In a food processor, combine the vanilla wafers, 2 cups of the powdered sugar, cocoa powder, orange juice concentrate, and corn syrup. Process until the cookies are ground to crumbs and mixture is evenly blended. Add the pecan pieces and pulse process until the nuts are finely chopped.
Transfer the mixture to a bowl and form into 1-inch balls.
Roll balls in 1/4 cup powdered sugar to coat.
Makes about 60 cookies.
PEANUT BUTTER BALLS
Ingredients:
2 cups peanut butter
1 lb. powdered sugar
1 cup butter, softened
6 blocks of chocolate
Directions:
In a bowl, combine peanut butter, powdered sugar and butter. Beat until well blended and smooth.
Roll mixture into 1-inch balls.
Place on wax paper lined baking sheet. Chill in refrigerator for about an hour.
Melt chocolate in microwave. Stir until smooth.
Dip balls in chocolate, until well coated.
Set on a waxed paper-lined baking sheet and let stand until hardened.
