Here is another great recipe for your Cinco de Mayo fete. While there are a few more steps to this recipe than normal–the results are well worth the effort. A second set of hands is helpful–but not necessary.
Grilled Shrimp Quesadillas
To make approximately 4 quesadillas you’ll need:
1 red onion, halved
1 large beefsteak tomato, halved
1 bell pepper, sliced
15 to 20 frozen cocktail shrimps, thawed
2 cups of Mexican blend or sharp cheddar cheese, shredded
4 large flour tortillas
juice of 3 limes
1 tbsp of cumin
Directions:
Place shrimp on a skewer and in a shallow dish. Marinate in juice of lime and cumin for at least 1 hour before cooking. (Note: If you don’t have time to marinate. . .don’t worry. You can still baste the shrimp in the mixture while it’s cooking.)
Half the onion, tomato, and slice the side off of each bell pepper so that it’s cored and seeded. . .but don’t slice the pepper too small. (Note: you don’t have to do this, but I prefer to put the vegetables in foil packets and grill it that way.)
Place the shrimp and vegetables on the grill. Cook until onions are tender and shrimp is heated through. (Frozen shrimp are usually fully cooked.) Baste the shrimp occasionally with the marinating juices.
When the shrimp and vegetables are ready to come off the grill, set them aside and let them cool so you can handle them. While they are cooling, go ahead and do your second batch.
Once they are cool, chop up the shrimp and vegetables. To each flour tortilla add the shrimp and vegetables along with about 1/2 cup of cheese. Grill the quesadilla on both sides until the cheese is melted. (Note: You’ll be more successful if the quesadillas are to the side and not smack in the center of the grill.)
