Citrus Style Chicken

When the weather is warm and dinner needs to take minimal effort, chicken is an easy go-to. This recipe in particular, combines fresh citrus flavors that will tingle your mouth and make you feel like you’re in the middle of the Caribbean—or will at least make you WISH you were in the middle of the Caribbean.

For this recipe you’ll need:

4 boneless, skinless chicken breasts (approximately 1 pound total)

3 garlic cloves, peeled and sliced thinly

1 Tablespoon butter

1 teaspoon lime zest

2 Tablespoons fresh lime juice

¼ teaspoon ground ginger

1/8 teaspoon crushed red pepper

1 orange

To make this recipe:

In a large skillet over medium heat, cook the chicken and garlic in butter for approximately 10-15 minutes, until the chicken is tender and no longer pink. For best results, only turn the chicken once during cooking time and be sure to stir the garlic occasionally so it does not burn.

Meanwhile, combine lime zest and juice, ginger, and red pepper in a small bowl and set aside. Peel the orange, reserving the juice, and cut into slides for garnish. Add the reserved orange juice and the lime juice to the skillet with the cooked chicken. Cover the chicken with the orange slices, cover, and cook for 2 minutes or until heated through.

This recipe is delicious served with white rice. To plate, spoon reserved drippings over the chicken and garnish with desired amount of additional lime wedges.

Tip: To make white rice: In a medium pan, bring 2 cups water, 1 teaspoon butter and 1 teaspoon salt to a boil. Add 1-cup long grain rice and bring back to a boil. Cover, reduce heat to low, and simmer 20 minutes until rice has absorbed the water and is tender. Allow to sit for five minutes then fluff with a fork.

Makes 4 servings
