It is the time of year again that someone you know has a cold or even worse, the flu or pneumonia. When you have a cold or other sickness yourself, you know how difficult it is to do the simplest tasks, such as cooking. When you have little ones in the house, it is especially difficult and you usually need to call in help. This recipe is a simple soup recipe for someone who is under the weather, that you could fix up for them. They will appreciate the gesture and the hot meal.
You will need:
A dash of each: sweet basil, parsley flakes, oregano, paprika and chili powder.
Salt and pepper to taste
2 bay leaves, remove when the soup is done
1 Large hot pepper, whole, if desired. Remove when the soup is done.
1 Cup of each: celery, onions, carrots – chopped
1 pound of ground beef
2-4 beef bouillon cubes
2 medium diced potatoes
1 bag of frozen mixed vegetables
1-15 oz. can tomato sauce
To make it:
Brown ground beef in a skillet until brown; drain fat. Transfer to kettle and add bouillon cubes, potatoes and mixed vegetables. Add can of tomato sauce and the rest of the ingredients together. Turn heat down to simmer. Cook gently for 30-40 minutes or until done. Then add a soup spoon of sugar. Remove bay leaves and hot pepper when done.
You also need to add some kind of bread to serve with this soup. You can bake some cornbread or make biscuits, or include a box of crackers. They can snack on the crackers in between their meals.
