Cooking by Numbers
Calling all you stock pilers and pantry challenge participants. This is the coolest thing I’ve seen in a long time. You have a check list and you mark what you have on hand and then it gives you a list of things you can make out of what you have. The recipes are listed according to the percentage of ingredients they use that you have on hand. So for example recipes that contain ONLY things you have on hand are on top.
Onions Without Tears
Peeling and cutting an onion under cold running water reduces the volatility of the sulfide that makes your eyes water. It also helps to refrigerate onions before cutting them.
Don’t Like Onions?
You can use cabbage instead of onions in a recipe that calls for diced or finely chopped onions. It will not change the taste of the recipe too much except to reduce the strong taste of onion.
Avoid the Lobster Screaming in Pain when Boiled. . .
I couldn’t resist including this although it’s not a tip but rather a myth busted. Lobsters, do not scream in pain when boiled. Crustaceans do not have a brain. . .and without a brain they cannot feel pain. They also don’t have lungs or a respiratory system, so they don’t scream. The noise that you hear is actually air trapped in the shell. When it gets hot, it expands and forces itself out thus making the ‘scream’. So go ahead and enjoy your lobster guilt free!
