Who wouldn’t love a delicious, giant-sized cookie? Here are two recipes for Cowboy Cookies, one the more traditional recipe, sometimes called “Colorado Cowboy Cookies,” and Laura Bush’s special recipe that she shared on a network morning show. I haven’t tried her version yet, but I know I’ll love it because the recipe has pecans and coconut in it. Yee-haw!
Cowboy Cookies
2 cups flour
2 cups rolled oats
1 tsp. baking soda
1/2 tsp. baking powder
1/ 2 tsp. salt
1 cup unsalted butter, softened
3/4 cup sugar
3/4 cup packed dark brown sugar
2 eggs
1 tsp. vanilla
1 1/2 cups semisweet chocolate chips
1 cup toasted walnuts, chopped
In a large bowl, beat butter, sugar and brown sugar until fluffy. Add eggs and vanilla and stir together. Mix the flour, oats, baking soda, baking powder and salt together. Add to the butter mixture and stir until blended. Stir in chocolate chips and walnuts. Cover dough and chill one hour.
Preheat the oven to 350 degrees. Grease a baking sheet. For each cookie, measure 1/4 cup of dough and roll into a ball. Flatten balls so they’re about 3 inches across. Place 2 inches apart on cookie sheet. Bake 12 – 15 minutes until golden brown around edges. Let cool a few minutes before transferring to cooling rack.
Laura Bush’s Texas Governor’s Mansion Cowboy Cookies
3 sticks butter
1-1/2 cups sugar
1-1/2 cups brown sugar
3 eggs
1 tbsp. vanilla
3 cups flour
1 tbsp. baking powder
1 tbsp. baking soda
1 tsp. salt
1 tbsp. cinnamon
3 cups chocolate chips
3 cups oats
2 cups coconut
2 cups pecans
Cream butter and sugars. Add eggs and vanilla. Beat. Add dry ingredients until blended. Stir in remaining ingredients. Measure 1/4 cup dough. Roll into balls and flatten. Bake at 350 degrees for 10-12 minutes.
