I saw this recipe today and it looked really good. I’ve seen creamed spinach recipes that are labor intensive and that take a long time. This recipe, in contrast, is simple and easy to make, and it only takes about 20 minutes total cooking time to have a flavorful, uniquely flavored side dish the whole family will love!
For this recipe you’ll need:
3 packages (boxes) frozen spinach, thawed
6 ounces cream cheese (two 3-oz bricks)
¼ white onion grated
Salt and black pepper to taste
¾ Cup parmesan cheese
To make this recipe:
Thaw the spinach. When it’s thawed, remove the spinach from the boxes and place on a kitchen towel. Wring out the excess liquid by squeezing the towel. It’s important to remove any excess liquid or the spinach will be soupy. NOT good.
In a skillet, melt the cream cheese over low heat. When it starts to break down, add the grated onion, salt, pepper, and parmesan. Cook until incorporated, stirring with a rubber spatula. Add the drained spinach and cook over low heat, stirring occasionally, for approximately 20 minutes. Serve hot or warm.
