Creamy Cilantro Dressing
A sneaky way to get more tofu into your diet. You won’t miss the mayo either!
INGREDIENTS:
1/4 lb silken tofu
1 1/2 tbs fresh lime juice
2 cloves garlic cloves
1 whole shallot, rough chopped
1/2 tsp Dijon mustard
1/4 cup water
2 tbs olive oil
1 1/2 tbs fresh cilantro
1 dash salt and pepper
DIRECTIONS:
1. Place the tofu, lime, garlic, shallot, mustard, cilantro into food processor with metal blade and blend till pureed.
2. Combine the water to prcessor while machine is still running, follow with the oil salt and pepper. Serve immediately on your favorite salad or grilled meat.
