It’s a pain having some sort of allergy and being unable to find recipes to suit you. Recently Angela asked for dairy free casseroles. Okay, so one isn’t a casserole here, but they are both dairy free recipes that are simple to make and of course they’re gluten free. As always, if you don’t have gluten free problem then substitute plain flour for the rice flour.
Skewered Beef
Ingredients
1 small onion diced
2 teaspoons sweet chili sauce
1 teaspoon cayenne pepper
2 teaspoon ground coriander
1 teaspoon dried basil
2 teaspoons turmeric
1 pound beef thinly sliced
1 punnet cherry tomatoes cut in halves
Half capsicum, cut into slices about 1 inch in size
2 small zucchini, sliced thickly
12 bamboo skewers soaked in water
Method
Blend the first six ingredients together until it becomes a thick paste.
Marinate beef strips in this paste for around 45 minutes, or longer if you have time.
Thread onto skewers alternating tomato, green pepper and zucchini with the beef.
Grill for 10-12 minutes on a hot BBQ.
Beef in Spicy Sauce
Ingredients
1 pound blade or round steak
2 tablespoons rice flour
Quarter teaspoon mustard
Quarter teaspoon curry powder
Half teaspoon ginger
2 sliced carrots
I diced onion
2 tablespoons gluten free Worcestershire sauce
1 tablespoon white vinegar
1 and a quarter cups water
1 teaspoon raw sugar
Salt to taste
4 tablespoons gluten free ketchup
1 tablespoon tomato paste
Method
Mix together flour, mustard and spices. Chop meat into cubes and coat it with flour mix. Place meat in greased casserole dish. Add onions and carrot. Combine all other ingredients and pour into casserole dish. Cover and cook in moderate oven 1 and a half to 2 hours.
If you like a sweeter taste or just for a simple variation you can add
Half cup sultanas
Or 2 tablespoons plum jam and 1 tablespoon lemon juice
