Dealing With Thanksgiving Leftovers

It’s done. I have cooked, baked, served, consumed and cleaned up enough food for a small army. No matter how conservative I try to be when making a holiday dinner there is always too much food. There are just so many yummy foods to have at the holidays, and so many of them taste good mixed together that you have to have a little of everything.

Now my fridge is bulging, bowls, casserole dishes, Tupperware and who can forget the pies? That’s a lot of food for two people. The really good thing is since it’s a long weekend I can use all that turkey in some dishes and freeze them for later. Turkey sandwiches with cranberry sauce are always my favorite, and I will have plenty for my lunch next week.

I’m also going to make turkey enchiladas, turkey noodle soup, turkey fajitas and bbq turkey for sandwiches. Since all of the turkey is already cooked it won’t take long to throw those things together and freeze them in meal sized portions. Of course there are plenty of leftover side dishes to have with our dinner for the next few days. I have tons of mashed potatoes so I think we will have potato pancakes tomorrow and I think I’m going to try that with the sweet potatoes as well.

My cranberry sauce will get frozen for later, it’s so yummy that it’s nice to have some without all the work that originally went in to it. For so many years I threw away such a lot of food because I didn’t plan ahead. Now with a little planning I can use every bit of our Thanksgiving dinner, no matter how much is left over. It’s nice to have meals already made that can just be heated up, especially at this time of the year with so much else going on.

So tomorrow while everyone is fighting the crowds doing their Black Friday shopping I will be cooking again, but it will make the next few weeks a little less hectic,
