Delicious Grilled Potato Salad
2 pounds new potatoes cut in half
2 green peppers cut into 2-inch chunks
Parsley, finely chopped
1/2 cup olive oil, divided
2 teaspoons Dijon style mustard
2 1/4 tablespoons white wine vinegar
Salt and pepper to taste
In a bowl, toss the potatoes and green peppers with 2 tablespoons of the oil. Add parsley and toss. Thread the vegetables onto wooden skewers, placing on a hot grill. Cook until potatoes are slightly browned, about 15 minutes. Remove vegetables and set aside. In a bowl, mix the mustard, vinegar, remaining oil, and salt and pepper. Add vegetables and mix well to serve.
