Autumn and winter scents fill kitchens and homes with smells of the holiday season. Wonderful autumn foods are prepared and enjoyed, and there seems to be an endless flow of baked breads and desserts. After the holidays are over, the baking seems to stop and we all go back to store-bought goodies. Baking homemade bread, especially dessert style bread, is much easier than you may think.
I am thrilled to share this recipe for Pumpkin Bread with you. Biting into this bread brings you back into the holiday season. Pumpkin bread can be made all year round thanks to canned pumpkin and the availability of dried seasonings.
Breads can make a wonderful snack as well as a satisfying breakfast paired along side your favorite cup of coffee. Kids enjoy pumpkin bread as an after school snack or healthy dessert option.
To Prepare This Recipe You Will Need:
3 ½ c flour
2 tsp baking soda
1 ½ tsp salt
1 C vegetable oil
4 eggs
2/3 C water
2 C canned pumpkin
3 C sugar
1 C nuts (optional)
Directions for Preparation:
Preheat oven to 350 degrees F.
In a bowl, combine and sift all dry ingredients. Make a well in the center of the dry ingredients and add all other ingredients. Next, put equal portions of batter into 2 greased and floured bread pans.
Cook bread at 350 degrees for 1-hour. After 1-hour check to see if the bread is ready. If a toothpick inserted into the center of the bread comes out clean the bread is done; if it comes out gooey with batter let the bread cook longer, checking every 5 minutes.
Tip for cooking breads:
For a more moist texture, put a pie tin filled with water on the bottom rack of the oven when cooking. Your bread will retain more moisture, usually lost in the cooking process.
