Diabetic Friendly Chocolate Cheesecake

I have a history of diabetes in my family, so naturally I am concerned about it. Eating well also runs in my family, so I must balance between being health and being happy with what I eat. This diabetic friendly chocolate cheesecake is an excellent medium between the two! It is from the Quick-Smart Diabetic recipe collection.

For this recipe, you will need one 5.25-ounce package of sugar-free chocolate graham crackers, reduced calorie margarine, ground cinnamon, cooking spray, one .25 ounce envelope of unflavored gelatin, fat-free milk, 2 1/2 8 ounce packages of 1/3-less-fat cream cheese, vanilla extract, sugar substitute (I like to cook with Splenda), unsweetened cocoa, and five .06 ounce sugar-free chocolate wafer bars.

To prep for this recipe, crush the one package of sugar-free chocolate graham crackers. Melt 1/3 cup of reduced-calorie margarine. Coarsely chop your sugar-free chocolate wafer bars.

Preheat the oven to 350 degrees. Combine the package of crushed sugar-free chocolate graham crackers, the 1/3 cup of melted reduced-calorie margarine, and 1/4 teaspoon of ground cinnamon in a bowl. Stir well. Press that crust mixture to the bottom and sides of a 9 inch springform pan that has been well coated with cooking spray. Cook this in the oven for 8 minutes then remove and let the crust cool on a wire rack.

In a small saucepan, pour 1 cup of fat-free milk. Sprinkle the envelope of unflavored gelatin in the milk and let it stand for one minute. Turn the burner on low heat and let this cook for two minutes, stirring occasionally to dissolve the gelatin. Remove from heat.

Beat the 1/3-less-fat cream cheese with an electric mixer until smooth. Add 2 teaspoons of vanilla extract and beat well. Add the gelatin mixture and beat until creamy. Add 14 tablespoons of sugar substitute and 1/4 cup of unsweetened cocoa and beat until that is blended.

Pour this mixture in your crust. Let it chill in the refrigerator for at least 3 hours so it can set. Top with the chopped wafers before serving.
