Dining in the Woods—Campfire Cookies and Ice Cream in a Bag

It ain’t over ‘til it’s over. That’s the way I feel about summer. While the majority of students head back to school this week it doesn’t mean you have to put a lid on outdoor activities. If you haven’t had the chance to go camping yet this year don’t despair. Many campgrounds stay open through October, giving you the opportunity to take your kids on an outdoor adventure of a lifetime.

One of the highlights of camping is getting to cook meals on an open fire. Kids love munching on anything that can spear with a stick, but they also enjoy ending a meal with a sweet treat. The following super simple recipes are the perfect way to do just that. After all, who says you can’t have cookies and ice cream in the woods?

CAMPFIRE COOKIES

Ingredients:

Your favorite cookie dough (homemade or store bought)

Cardboard Box big enough to fit over campfire grate

Foil

Campfire Grate

Cookie Sheet

Directions:

Cover the inside of the cardboard box with heavy aluminum foil, making sure the foil extends over the outside of box.

Warning: Do NOT let any part of the box’s interior peek through the foil!

Place raw cookie dough on cookie sheet.

Make a nice sized campfire and wait for good hot cooking coals to spread out evenly under the grate.
Place cookie sheet on campfire grate over coals (or charcoal), and cover with box.

Bake approximately 10-12 minutes checking often and adjusting coals accordingly. (If the cookies are getting burned, take some coals away.)

This box oven method is easy and safe provided the box doesn’t touch the flames.

ICE CREAM IN A BAG

Ingredients:

1 cup milk

1 tablespoon sugar

1/4 teaspoon vanilla extract

2 sandwich size Ziploc bags

1 one gallon size Ziploc bag

2 cups ice

1 tablespoon coarse salt

Directions:

Put one small Ziploc bag inside the other, then add milk, sugar, and vanilla extract to the inside bag. Remove excess air and seal both bags.

Add the ice and salt to larger bag and place smaller bag inside. Seal tightly.

Shake bag vigorously for 10-15 minutes.

Eat directly from bag or divide among cups.
