Dutch Apple Pancakes-Light and Delicious

Have you ever wondered how to make these delightfully thin, delicate treats? They’re delicious with sauce and powdered sugar, and are great for a holiday or a weekend.

For this recipe you’ll need:

For the crepes:

1-Cup flour

1 ½ -Cups milk

4 large eggs

¼-Cup apple juice

2 Tablespoons granulated sugar

½ of a grated apple (a mild apple like golden delicious)

For the Filling:

5 apples (golden delicious or gala work great)

1/3-Cup raisins

1 ½ Tablespoons honey

Sprinkle of cinnamon

¼-Cup apple juice

To make the crepes:

In an electric mixer mix together the flour, milk, eggs, apple juice and sugar. Beat until smooth. Next, add the grated apple. In a heated, non-stick crepe pan, heat one teaspoon butter or vegetable oil. Pour approximately 2 TB batter into the pan, spreading it evenly to cover the entire surface. Cook it until it browns around the edges (about 30 sec.). Flip it with a spatula or your fingers and cook another 30 seconds or until it starts to brown. Slide the crepe onto a plate and continue until all the batter is used.

To make the filling:

Peel, core and dice the apples. Gently simmer apples, raisins, honey, cinnamon, and apple juice until the apples are soft but not mushy. Using a potato masher, break up the apple mixture to make the apple pieces smaller

Spoon some of the apple filling onto each crepe and fold twice. Dust the tops with powdered sugar and serve.
