Easter Cupcake Decorating Ideas

What could be cuter than an entire basket full of yummy easter cupcakes? Mix up a batch of cupcakes from your favorite recipe, try the basic cupcake recipe below or even use a boxed mix. Then go crazy with one or more of the following Easter Cupcake decorating ideas.

Basic Vanilla Cupcake Recipe

Makes 24 cupcakes

Ingredients:

2 1/2 cups all-purpose flour

1-1/4 teaspoon baking soda

1 large pinch of salt

10 tablespoons butter, cut into pieces (1 stick plus 2 tablespoons)

1-1/3 cup milk

2 cups white sugar

5 eggs

2 teaspoon vanilla extract

Directions:

Preheat an oven to 350 degrees. Prepare two muffin tins with paper cupcake liners.

Combine the dry ingredients: flour, baking soda, and salt in a bowl.

Melt the butter and heat the milk in a small saucepan over low heat until the butter has melted. Then, beat the sugar, eggs and vanilla in a large bowl with an electric mixer until the batter thickens and is lighter in color.

Gradually beat in the flour mixture on low speed until it just mixed. Do not overmix. Slowly pour in the hot butter and milk, beating until just mixed.

Pour the batter into the cupcake liners.

Bake 20 minutes or until done. Cool the cupcakes in pan for 10 minutes and then move them to a cooling rack to cool completely before decorating.

Decorating Ideas

Frost a cupcake in yellow or your favorite pastel color. Tint sweetened coconut with green food coloring. Arrange the coconut on top of the cupcake like a nest. Place candy eggs in the center of the nest.

Frost a cupcake in lavender and then place a yellow marshmallow peep chick on top.

Roll and cut out flowers from fondant. Place them on a frost cupcake.

For bunny print cupcakes, frost a cupcake in white. Place one mint cookie (thin mints) or mint patty on the cupcake for the bunny’s pad and three junior mints around for the toe marks.
