Easy Beef Stew Casserole

There have been times when I was either too busy or sick and was unable to fix a dinner. When I cook dinner everyday for my family, I fix a large amount of everything in order to fill everyone up. I usually double all my recipes. Life keeps us busy, even for those of us who stay at home. I don’t usually get to keep the freezer stocked up on prepared meals, although I wish I could. When I am sick or I am busy, I fix the Beef Stew Casserole. It is a complete meal all in one. You have your meat, your vegetables, cheese for dairy and your bread. This is simple enough to allow your kids to prepare. I have prepared it to take to someone who was sick because you can heat up the portions as you choose. It tastes just as good reheated. If your kids are in after school activities and they eat before they leave, they may be a little hungry when they return. You could have this recipe ready for them to enjoy.

This is what you will need:

2 Cans of Beef Stew, I like Dinty Moore, but you can use any

1 package of Mild Cheddar Cheese.

1 can of Grands Biscuits

NOTE: You can use any kind of cheese with this recipe. It basically depends on your preference. Try Mozzarella, or the combination cheese.
Also, I use grands biscuits because they are big and it covers the casserole. If you use a smaller biscuit, you may need two cans.

Preheat your oven to 350 degrees. Use a round or square casserole dish. Add the beef stew, straight out of the can, into the casserole dish. Sprinkle your chees on top. Pinch and tear your biscuits into sections. I usually get four sections per biscuit. Drop them on top of the cheese. Bake for about 45 minutes or until your biscuits are done. Allow to cool before serving.
