Easy Vanilla Cookies

I admit I’m not the best baker. Still, I love to give it a go. And I love baking cookies. But sometimes, making cookies can be too time consuming. That’s why I was delighted to find this recipe for vanilla cookies. Using only four ingredients, and taking only minutes to make, they’re the perfect solution for busy moms, dads, or anyone who wants to prepare a sweet treat without all the fuss. These cookies are bite-sized, creamy, buttery, and most of all…deliciously simple to prepare. Serve them alone or with coffee or tea. These cookies are great any time of day!

For this recipe you’ll need:

1 ½ sticks (3/4 cup) of butter, softened

¼ cup granulated sugar

1 Tablespoon pure vanilla extract (can substitute almond extract if you’d like)

2 cups all-purpose flour

To Sprinkle the Cookies:

Powdered sugar

To make this recipe:

Preheat the oven to 350 degrees

With an electric mixer, beat together the butter and sugar at medium speed until it is light and fluffy. Add the vanilla extract and beat. Gradually beat in the flour until it is smooth and combined.

On a floured surface, use a floured rolling pin and roll the dough into a ½-inch thickness. Using a 1-inch round cookie cutter (can use a baby bottle cap, a small glass, etc. as well) cut out the cookies (makes 24 cookies). You’ll need to gather the trimmings, re-roll, and cut out more cookies several times to get all the cookies made.

Place the cookies 1 inch apart on a baking sheet sprayed with cooking spray. Bake about 18-20 minutes, until the cookies are set and slightly golden. Transfer the cookies to a wire rack to cool and sprinkle with powdered sugar.

**If you’d like chocolate cookies instead, add 2 Tablespoons of cocoa and double the sugar. Bake as directed above.
